Butternut squash Miso soup Olive oil Zucchini Onion Garlic Potato Vegetable broth Sea salt Black pepper Spinach Harissa paste
Coat the cubed butternut squash in miso paste.
Saute garlic & onion then add in butternut squash, zucchini & potato.
Add vegetable broth, seasonings, and harissa paste. Cook for 20 minutes.
Blend 3/4 of the soup until creamy then pour back into pot and cook for 10 minutes.
Swap the potato with old fashioned oats or rice to thicken the soup!
Mix in spinach & cool slightly before eating!
