gluten free  puff pastry

 – Almond flour  – Tapioca flour  – Gluten free 1 to 1 Baking Flour  – Salt  - Butter (dairy or vegan)

Pulse almond flour, tapioca and gluten free flour in a food processor.

Transfer the mixture to a large bowl.

Add cold butter and pinch together with your fingers with the flour mixture.

Add cold water and toss until a dough forms.

Wrap the dough and place in the fridge for 30 minutes.

Roll into a rectangle and make 3 folds. Repeat 2-3 more times to create flakey layers. 

Set the gluten free dough back in the fridge for 30 minutes.

When ready, roll out to make your favorite recipes using the gluten free puff pastry dough!
