Ingredients

Gluten Free Baking Flour Almond flour Tapioca starch Baking powder Salt Butter (dairy or vegan) Sugar Egg Vanilla  Filling of choice

Whisk together the gluten free flour, tapioca starch, almond flour, baking powder and salt.

Beat the butter and sugar in a bowl of an electric mixer.

Add the egg and vanilla extract.

Add the dry ingredient mixture into the butter mixture and mix until a dough forms.

Wrap the dough in plastic wrap and refrigerate for at least 1 hour so the dough will easily roll out.

Prepare the chocolate filling for the Hamantaschen by mixing butter, cocoa powder, sugar, salt, vanilla extract and an egg white together. Refrigerate until ready to use!

Place a piece of plastic wrap onto a cutting board and sprinkle with gluten free flour.

Roll the dough between the two pieces of plastic wrap. Cut with a round cookie cutter.

Scoop 1 teaspoon of filling into the center of each cookie. Brush the edges of the dough with egg wash, and then pinch to seal into a triangle shape.

Once all the cookies are formed, make sure they're about 2 inches apart from each other. Bake until lightly golden!
