Gluten free press-in pie crust

Ingredients

Gluten free oat flour Tapioca starch Almond flour Salt Maple syrup Refined coconut oil Ice water

Add the oat flour, tapioca starch, almond flour and salt to a food processor. 

Pulse the dry ingredients until well combined, about 30 seconds.

Pour in the maple syrup.

Add the room temperature or cold butter and pulse the mixture again.

Stream in cold ice water.

Pulse the food processor until the mixture resembles cookie dough.

Place the dough into a greased pie dish.

Use your fingers to press the dough into the pie pan.

If the dough sticks you your hands, wet your fingers to prevent sticking.

Poke the dough with a fork and set in the fridge for a few minutes while the oven preheats.

Fully bake or partially bake (as shown below) the dough. Fill with your favorite fillings!
