Cook quinoa with a bit of salt.
Mix together diced hearts of palm, pickles, tomatoes, cucumber, onion, garlic, and red pepper in a large bowl.
You can swap the cucumber for zucchini!
Add cooked & cooled quinoa to the veggies.
Whisk together the dressing ingredients: combine the olive oil, lime juice, apple cider vinegar, sea salt & black pepper.
