Ingredients

Olive oil Onion Garlic Salt Red pepper flakes Tomato paste Dry white wine Crushed tomatoes Coconut milk or heavy cream Fried oregano Fresh basil Honey Unsalted butter  Penne pasta, gluten free

Boil the pasta according to package directions. I use gluten free Penne.

Drain the pasta in a colander. No need to rinse!

In a large skillet, sauté the onion in olive oil with salt.

Add garlic, red pepper flakes and tomato paste to the pan.

Add dry white wine and simmer.

recipe tip

When simmering the wine, it will help to lift off any pieces that have stuck to the bottom of the pan. These yummy bits that come off the pan can be mixed in with the sauce.

Mix in the tomato puree, coconut milk/cream, salt, oregano, basil and honey.

Simmer 25 minutes, then use an immersion blender to blend the sauce.

Mix butter or vegan butter into the sauce.

Add pasta to the sauce and mix together!
