gluten free potato latkes

Potatoes Onion Egg Potato starch Salt Pepper Oil 

Peel potatoes and place into a bowl of cold water to prevent browning.

Shred potatoes and onions in a food processor or box grater.

Strain potato-onion mixture through a cheesecloth or towel to remove excess liquid.

Add shredded potatoes, egg, potato starch, salt and pepper to a bowl.

Mix everything together.

Fry 1/4 cups of latke batter in oil.  (Baking options provided too)

Fry latkes for 2-3 minutes on each side.

Set latkes on a pan or plate lined with paper towel to drain.

Serve latkes with a bowl of sour cream and applesauce on the side.
