Curried sausages

 – Sweet or hot Italian sausages – Extra virgin olive oil – Onion – Garlic – Ginger (optional) – Red pepper flakes – Ground coriander – Ground cumin – Ground turmeric –Ground cinnamon –Kosher salt  – Russet potatoes  – Cauliflower  – Green beans – Crushed tomatoes – Vegetable broth – Fresh cilantro – Frozen peas

Brown sausages in a pan until crispy.

Remove sausages from the pan and transfer to a bowl. 

Sauté the onions until translucent.

Mix in the Garlic, Ginger (optional), Red pepper flakes, coriander, cumin. turmeric, cinnamon and salt.

Cook for 2 minutes until fragrant.

Add the potatoes, cauliflower, green beans and crushed tomatoes.

Pour in the broth!

Simmer for 30-40 minutes.

recipe tip

You'll know the recipe is ready when the potatoes are fork tender but they still hold their shape. The cauliflower should be very soft but not disintegrated.

Add the cooked sausages, peas and cilantro to the pot and mix together.
