Gluten free Penne al salmone

Ingredients

– Olive oil – Unsalted butter (I use vegan butter) – Shallot – Garlic – Fresh salmon – Salt – Pepper – Dry white wine – Canned coconut milk – Gluten free Penne pasta – Parmesan cheese (I use dairy free) – Lemon zest – Lemon juice – Fresh basil

Bake salmon with salt and pepper.

Sauté shallot and garlic in the oil and butter.

Add the dry white wine and simmer 3 minutes.

Add to the pot: coconut cream, salt, pepper, grated parmesan, lemon zest, lemon juice and the reserved pasta water

Mix in cooked penne pasta and fresh basil.

Add the flaked salmon on top and mix!

You can add more or less garlic depending on how garlicky you like the pasta.
