– Olive oil
– Unsalted butter (I use vegan butter)
– Shallot
– Garlic
– Fresh salmon
– Salt
– Pepper
– Dry white wine
– Canned coconut milk
– Gluten free Penne pasta
– Parmesan cheese (I use dairy free)
– Lemon zest
– Lemon juice
– Fresh basil

Bake salmon with salt and pepper.

Sauté
shallot and garlic in the oil and butter.

Add the dry white wine and simmer 3 minutes.

Add to the pot: coconut cream, salt, pepper, grated parmesan, lemon zest, lemon juice and the reserved pasta water
