Sausage curry

 – Sweet or hot Italian sausages – Extra virgin olive oil – Onion – Garlic – Ginger (optional) – Red pepper flakes – Ground coriander – Ground cumin – Ground turmeric –Ground cinnamon –Kosher salt  – Russet potatoes  – Cauliflower  – Green beans – Crushed tomatoes – Vegetable broth – Fresh cilantro – Frozen peas

Brown sliced sausages in a large pot until crispy.

Remove sausages from the pan and transfer to a bowl. 

Sauté the onions until translucent and partially cooked through.

Mix in the garlic, ginger (optional), red pepper flakes, coriander, cumin. turmeric, cinnamon and salt. 

Cook for 2 minutes until fragrant.

Add the potatoes, cauliflower, green beans and crushed tomatoes.

Pour in the broth!

Simmer for 30-40 minutes.

Add the cooked sausages, peas and cilantro to the pot and mix together.
