Easy vegan rice pudding - 5 ingredient

Jasmine rice Oat milk Sugar Vegan Butter  Vanilla extract (eggs in photo are for non vegan ingredient option) 

Cook rice according to package directions.

Add the oat milk, stir often and simmer for 20 minutes until thickened.

Here's the mixture once thickened.

Mix the eggs, then add 2 cups of the hot rice mixture and whisk together.

Add the tempered egg-rice mixture back to the pot, then mix in the butter and vanilla. 

Spread the rice pudding into the pan.

Sprinkle with cinnamon.
