These apple pie energy bites taste like your favorite cozy fall dessert in a little no-bake snack. Made with dried apple chips, almonds, oats, dates, maple syrup, and warm apple pie spice, they are naturally gluten-free, vegan, and ready in minutes.

Ingredients
 

  • 1 cup dried apple chips
  • ½ cup almonds
  • ½ cup rolled oats
  • 1 teaspoon apple pie spice
  • ½ cup pitted Medjool dates, soaked in hot water for 10 minutes and chopped
  • 1 tablespoon maple syrup
  • 2-4 tablespoons water

Instructions
 

  1. Blend 1 cup dried apple chips, ½ cup almonds, ½ cup rolled oats and 1 teaspoon apple pie spice in a food processor until small pieces remain.
  2. Then, add the ½ cup pitted Medjool dates, 1 tablespoon maple syrupand 2-4 tablespoons water.
  3. Blend until the mixtures forms into a dough.
  4. Roll the dough into 16-18 tablespoon-sized balls and place on a parchment cookie sheet.
  5. Refrigerate for 1-2 hours before eating.
