Melt coconut oil, chopped chocolate and sugar in a pot. Let cool.
In a large bowl, whisk eggs, salt, instant coffee & vanilla extract.
Add chocolate mixture to the egg mixture and whisk fast.
Fold in the gluten free flour.
Grease ramekins with vegan butter & sugar to prevent the cakes from sticking!
