Smashed Potatoes with Vegan Ranch Dip
Ingredients

Instructions
- Preheat the oven to 450℉ and line a baking sheet with parchment paper.
- Place the rinsed potatoes onto the pan and drizzle over 1 tablespoon of olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper.
- Bake for 35-45 minutes.
- Then, smash each potato using a fork or potato masher.
- Drizzle another 2 tablespoons of oil over the potatoes. Then bake for another 15-20 minutes.
- Serve immediately with a dollop of the ranch dip.
