Olive oil Onion Garlic Zucchini Vegetable Broth Coconut milk Potatoes Bok Choy Sea Salt Pepper Coriander Red Pepper Flakes Apple Cider Vinegar Cilantro
Cook onions and garlic in a pot until translucent.
Add zucchini and cook 8 minutes.
Add vegetable broth, coconut milk, potato, bok choy stems, salt, pepper, coriander and red pepper flakes to the pot and mix.
Simmer for 25 minutes.
Add apple cider vinegar, cilantro & bok choy leaves.
Add the bok choy leaves at the end since they cook super quick!
Garnish with sliced jalapeno, lime and cilantro.
