    Why you’ll love this recipe!

    Ricotta Appetizer with Olives and Honey is such an easy way to elevate a simple container of ricotta. I personally love to use Kitehill Ricotta since it is dairy free, but you can use real dairy ricotta too.

    If you are looking for more delicious appetizers to serve, I'd definitely recommend making my Sausage & Date Stuffed Mushrooms with Almonds on the side or even my Summer Fennel Salad with Melon for a fresh and vibrant addition!

    Ingredients

    Ingredient notes

    • Ricotta cheese - Use dairy or vegan! Both are excellent options.
    • Olives & Capers - Add saltiness and briney flavor.
    • Honey & Olive Oil - Drizzle just a tad for lots of added flavor.
    • Lemon zest - I love using fresh lemon zest to brighten the dish!
    • Za'atar - Za'atar is so great for adding a subtle Mediterranean flavor to this dish.

    Ingredient swaps

    • Capers - You can use any pickled ingredient, such as pepperoncini or even small chopped pickles!
    • Za'atar - Use any middle eastern spice mix that you like.
    • Ricotta - If you are not a fan of ricotta or simply don't have it on hand, you can use cottage cheese or farmer cheese instead.

    Instructions

    Step 1: Mix ricotta in a bowl and spread onto a plate or plater.

    Step 2: Top ricotta with all toppings: sliced olives, pistachios, lemon zest, honey, olive oil, capers, za'atar.

    Serve with your favorite (gluten free) crackers!

    Make ahead

    There is about no prep needed for this recipe! Just have all the ingredients at home, and assemble & decorate your plate with the toppings right before serving. I promise, it takes 2 minutes to assemble!

    Storage

    You can store any leftover spread in a container in the fridge for up to 4 days. You likely won't have any leftovers though!

    Also, this recipe is not freezer-friendly.

    Ingredients

    • 8 ounces ricotta cheese dairy or vegan
    • 4 olives sliced
    • 2 teaspoons capers
    • 1 tablespoon chopped pistachios
    • 1 lemon to zest
    • 1 teaspoon honey
    • 1 tablespoon Extra virgin olive oil
    • Crackers of choice I recommend gluten free Simple Mills crackers

    Instructions

    • Transfer ricotta to a bowl and mix so it becomes creamy and spreadable.
    • Spread ricotta onto a medium plate (to serve in).
    • Sprinkle with olive slices, capers and pistachios.
    • Zest the lemon right on top of the dip.
    • Drizzle with honey and oil.
    • Serve with crackers and enjoy!

    Notes

    • I love using KiteHill dairy free Ricotta, but any dairy ricotta will be perfect too! 
    • This recipe is super quick, so assemble right before serving. 
    • You can swap lemon zest for lime zest. 
    • If you don’t have capers, use something that is salty/briney, such as pepperoncini
