Easy Oat Flour Waffle Recipe
Soft and fluffy, these waffles are more on the tender side than the crispy side but still delicious and satisfying. Think, your favorite nostalgic microwavable Eggo waffles, but gluten-free and way healthier!
My husband can be skeptical when I try out different gluten-free flours, but he’s obsessed with this waffle recipe and doesn’t find it to taste healthy at all! In fact, it’s one of his most requested weekend breakfasts. We sometimes top the waffles with this Blackberry Compote!
Ingredients
- Eggs
- Maple syrup
- Butter - Unsalted dairy butter or unsalted vegan butter, melted.
- Greek yogurt - Whole Greek yogurt or vegan Greek-style yogurt works well too!
- Milk - Use whole milk, full-fat oat milk or cashew milk.
- Vanilla extract
- Oat flour - Spooned into measuring cup and leveled off for an accurate measure (gluten-free if applicable)
- Baking powder
- Cinnamon
- Salt
How to make oat waffles
Step 1: Combine eggs, maple syrup, melted butter, yogurt, milk, and vanilla in a bowl and whisk to combine.
Step 2: Whisk oat flour, baking powder, cinnamon, and salt together in a small bowl.
Step 3: Add the dry ingredients to the liquid ingredients and whisk until a thick batter forms.
Step 4: Heat the waffle iron according to the manufacturer's directions, spray it with nonstick cooking spray, and cook the waffles. Serve right away!
Recipe variations
- Stir in frozen fruit, like blueberries.
- Add ½ teaspoon pumpkin pie spice (or apple pie spice for apple vibes).
- Use the batter for pancakes—cook in a skillet with butter, vegan butter, or coconut oil.
- Swap butter for refined coconut oil to avoid coconut flavor.

How to make oat flour at home
Blend gluten-free old-fashioned rolled oats on high speed until you get a very fine flour-like texture.
Recipe Tips
- Use about ⅓ cup batter per waffle, or follow your waffle maker’s instructions.
- Greek yogurt (plain or vanilla) adds great flavor—skip the vanilla extract if using vanilla yogurt.
- Coat the griddle well with cooking spray for easy release!
How To Store
- Store waffles in a ziplock in the fridge and microwave for 20–30 seconds to reheat.
- Freeze for longer storage—just toast or microwave straight from frozen, or defrost in the fridge overnight.

- 2 large eggs at room temperature
- 3 tablespoons pure maple syrup
- 3 tablespoons avocado oil or unsalted vegan or dairy butter that is melted
- ⅓ cup whole milk greek yogurt or vegan greek yogurt (choose a high protein version if you like!)
- ¼ cup whole milk or full fat oat milk
- 1 teaspoon pure vanilla extract
- 1 ½ cups gluten free oat flour spooned into measuring cup and leveled off (137 grams)
- 2 teaspoons baking powder
- ⅛ teaspoon ground cinnamon
- ½ teaspoon Kosher salt Diamond Crystals
Instructions
- In a large bowl whisk together eggs, maple syrup, melted butter, yogurt, milk and vanilla extract.
- In a medium bowl, whisk together the oat flour, baking powder, cinnamon and salt.
- Add the dry ingredients to the liquid mixture and whisk until a thick batter forms.
- Heat the waffle iron according to the manufacturer's directions. Spray the waffle iron with nonstick cooking spray and cook according to the manufacturer directions. Use a fork to carefully lift the cooked waffle onto a plate or parchment lined pan, and repeat the cooking process with remaining batter. Enjoy!

- My waffle iron calls for ¼ cup batter per waffle. Check your guide to see how much batter to use.
- This recipe can be made with refined coconut oil in place of the butter or avocado oil if you prefer.
- Reheat: Easily store waffles in a ziplock in the fridge. Place waffles on a plate and microwave for 20-30 seconds until soft and warm.
- These waffles can be frozen and defrosted in the fridge overnight or easily placed in the toast for a few minutes. You can also defrost them from frozen in the microwave.
- Makes approx. 8 waffles.
