Ingredients
Oat Flour Waffles are pretty simple to make at home. Here’s a list of the ingredients you’ll need.
- Eggs - I like to use large eggs in this waffle recipe.
- Maple syrup - Make sure to use pure maple syrup and not table syrup or maple-flavored syrup.
- Butter - Unsalted dairy butter or unsalted vegan butter, melted.
- Greek yogurt - Whole Greek yogurt will give you a rich flavor as opposed to low-fat yogurt. Vegan Greek-style yogurt works well too!
- Milk - Use whole milk or full-fat oat milk or cashew milk for a richer texture and taste.
- Vanilla extract - Use pure vanilla extract for the best flavor.
- Oat flour - Spooned into measuring cup and leveled off for an accurate measure (gluten-free if applicable)
- Baking powder - A touch of baking powder helps the waffles rise.
- Cinnamon - A pinch of cinnamon adds warmth and a touch of spice to the waffles.

Method
Step 1: Combine the wet ingredients - Combine eggs, maple syrup, melted butter, yogurt, milk, and vanilla in a bowl and whisk to combine.
Step 2: Combine the dry ingredients -Whisk oat flour, baking powder, cinnamon, and salt together in a small bowl.
Step 3: Combine the wet and dry ingredients - Add the dry ingredients to the liquid ingredients and whisk until a thick batter forms.
Step 4: Get your waffle iron ready - Heat the waffle iron according to the manufacturer's directions, spray it with nonstick cooking spray, and cook the waffles. Serve right away!
Recipe variations and applications
- Stir in frozen berries - I love adding blueberries but you can mix in any type of fruit.
- Add pumpkin flavor by stirring in ½ teaspoon of pumpkin pie spice or use apple pie spice for apple-flavored pancakes.
- Turn the waffles into pancakes. Use a ⅓ cup measuring cup and pour the batter into a heated skillet. Use dairy butter, vegan butter, or coconut oil to fry them up.
- Try refined coconut oil in place of butter. Make sure to buy refined coconut oil so you don’t end up with any coconut flavor.
How To Make Oat Flour At Home
Is oat flour just ground up oats?? Yes, it basically is!
I like to use Bob’s Red Mill Gluten-Free Oat Flour for consistency in recipes using oat flour, but if you don’t have any on hand, you can easily make oat flour at home. Pull out your blender and blend gluten-free old-fashioned rolled oats on high speed until you get a very fine flour-like texture. This fine flour is perfect for making an oatmeal flour cookie.
Recipe Tips
- My waffle iron calls for ⅓ cup batter per waffle. Check your waffle maker’s guide to see how much batter to use for your waffle maker to ensure it cooks properly.
- Making waffles with yogurt is a game changer! Use plain or vanilla-flavored Greek yogurt for the best flavor. If you use vanilla-flavored you can omit the added vanilla extract.
- Coat the griddle well with cooking spray so the waffles can be removed effortlessly.

- ⅓ cup whole milk greek yogurt or vegan greek yogurt
- ¼ cup whole milk or full fat oat milk
- 1 teaspoon pure vanilla extract
- 1 ½ cups gluten free oat flour spooned into measuring cup and leveled off (137 grams)
- 2 teaspoons baking powder
- ⅛ teaspoon ground cinnamon
- ½ teaspoon Kosher salt Diamond Crystals
Instructions
- In a large bowl whisk together eggs, maple syrup, melted butter, yogurt, milk and vanilla extract.
- In a medium bowl, whisk together the oat flour, baking powder, cinnamon and salt.
- Add the dry ingredients to the liquid mixture and whisk until a thick batter forms.
- Heat the waffle iron according to the manufacturer's directions. Spray the waffle iron with nonstick cooking spray and cook according to the manufacturer directions. Use a fork to carefully lift the cooked waffle onto a plate or parchment lined pan, and repeat the cooking process with remaining batter. Enjoy!
